Red Hots candy, also known by the generic name cinnamon imperials, were first made in Chicago in 1932 by the Ferrara Pan Company. They were originally used mainly for cake and cookie toppings around Christmas and Valentine's Day.
Before immigrating to the United States from Italy in 1900, Salvatore Ferrara was a confectioner whose specialty included panned sugar coated candy almonds. These are the same candy almonds that are now called Jordan Almonds and are a tradition to have at wedding receptions.
In 1908, Ferrara opened a pastry and confection shop in Chicago where he continued to pan these sugar coated almonds. Because there was such a demand for them, he found himself shipping them to other parts of the country. The business was growing and becoming quite a success, so Ferrara, along with two brothers-in-law, Salvatore Buffardi, and Anello Pagno, formed a partnership in 1919 and began making a variety of panned candy, including Red Hots.
Panned candy is made by a special process, starting with the center pieces which are put in rotating copper or stainless steel pans. The rest of the candy ingredients (mostly sugar and flavoring) are added as it's rotating, resulting in an evenly coated confection.
Other panned candy made by Ferrara Pan Candy are: Lemonheads, Cherryheads, Boston Baked Beans, Atomic Fireballs and Jawbreakers.
Red Hots Ingredients: Sucrose, corn syrup, confectioners glaze, artificial flavor, gum acacia, carnauba wax, modified food starch, red 40.
This candy is manufactured in the USA and Canada.
