Recipe for Hot Pepper Candy
1-1/4 cup water
2 cups sugar
¾ cup light corn syrup
1 tablespoon butter
1 teaspoon cayenne pepper
You'll need a candy thermometer
Directions
1. Bring ingredients to a boil in a heavy duty saucepot. Cover for a few minutes so the steam can wash down the sides if the pot. Make sure all the sugar crystals are dissolved. You can wash the sides of the pot down with a wide pastry brush. Do not stir mixture after it is boiling.
2. Cook to the hard crack stage, or 300 degrees. Immediately remove from heat and let cool to 160 degrees.
3. Pour hot pepper candy mixture into lightly oiled sheet pan, but do not scrape the bottom of the pot!
4. You can cut the candy with scissors before it is too hard, or you can let it harden and crack it into pieces.
5. The candy will become sticky if not individually wrapped. Enjoy!
