Potato Candy
This potato candy recipe is really easy to make, although it can be a little messy. It's an old recipe that has been handed down by countless grandmothers to their grandchildren. There are many variations of the recipe; some people coat the potato candy in melted choclate, others in cocnut. This is the vey basic recipe- no frills added. It's well worth the small amount of time it takes to make- it's rich and totally delicious! (Just don't count the calories!)
1 Russet potato, peeled
2 lbs. Confectioners Sugar
Peanut Butter
1. Boil the potato until tender.
2. Mash the potato with a fork and let cool down slightly. The potato should not be hot, but still warm.
3. Gradually add the confectioners sugar, a half cup at a time. Mix it into a dough.
4. When all the sugar has been added, and it is easy to handle, roll or pat it till it's 1/8 thick.
5. Spread the dough with peanut butter.
6. Roll it like a jelly roll, and cut slices ½ inch thick with a serrated knife. Refrigerate for an hour, and enjoy the potato candy!
