Horehound Candy Recipe

Horehound Candies

1. Pour 8 cups of boiling water over 1 -1/2 quarts of loosely packed horehound leaves and stems.

2. Steep in a covered pot for 30 minutes.

3. Drain and discard the leaves.

4. Add:
  • 4 cups sugar
  • 1-1/4 cups dark corn syrup
  • 1 tablespoon butter
  • 1 teaspoon cream of tartar
5. Cook these ingredients until the hard ball stage or 300 degrees.

6. Pour into a buttered pan, let cool, and cut into pieces.

7. Wrap each piece to keep from getting sticky.
