Caramel Recipe
Caramel is made by cooking together cream, sugar, corn, butter, and flavoring such as vanilla.
You will need a candy thermometer
Dissolve over low heat in a large copper pan, stirring until the mixture boils:
2 cups water
2 cups corn syrup
1 cup heavy cream
1 cup butter
1. Cook over medium heat, stirring constantly, to soft ball stage or 235 degrees.
2. Remove from heat, and gradually add 1 cup heavy cream
3. Return to heat and cook to the firm ball stage or 244 degrees.
4. Without stirring, pour the mixture at once, into a buttered pan.
5. When the caramel is firm in about 3 hours, invert the candy onto a wooden cutting board and cut with a serrated knife.
